Steam-Baked Classic Brownies

Ingredients
- 2 large eggs
- 200g granulated sugar
- 115g unsalted butter, melted and cooled
- 2 tbsp vegetable oil
- 1 1/2 tsp vanilla extract
- 125g plain flour
- 45g cocoa powder
- 1/8 tsp sea salt
Instructions
- Heat the oven (steam function if available). Grease a 20cm square baking dish with butter or non-stick spray.
- In a large bowl, beat the eggs with a hand mixer until homogenous and frothy, about 1 minute.
- Add the sugar and beat until the mixture has lightened in colour and falls in ribbons off the mixer, about 1 minute.
- Add the butter, oil and vanilla and beat until smooth, about 1 minute.
- In a second bowl, whisk together the flour, cocoa and salt.
- Add the flour mixture to the wet ingredients and beat just until combined — don’t over-mix or the brownies will be tough. The batter will be quite thick.
- Pour the batter into the prepared pan and smooth the top.
- Bake until the brownies reach your desired doneness — 15 minutes for thick, ooey-gooey brownies, up to 20 minutes for fluffier, cakey ones. Don’t bake longer than 25 minutes.
- Let the brownies cool in the pan for 5 minutes, then cut into squares and transfer to a wire rack to finish cooling. Serve with ice cream, whipped cream, sprinkles, or chocolate syrup.
