Steam-Baked Classic Brownies

Decadent chocolate brownies designed for a steam oven, adjustable from fudgy to cakey depending on baking time.

Ingredients
  • 2 large eggs
  • 200g granulated sugar
  • 115g unsalted butter, melted and cooled
  • 2 tbsp vegetable oil
  • 1 1/2 tsp vanilla extract
  • 125g plain flour
  • 45g cocoa powder
  • 1/8 tsp sea salt
Instructions
  1. Heat the oven (steam function if available). Grease a 20cm square baking dish with butter or non-stick spray.
  2. In a large bowl, beat the eggs with a hand mixer until homogenous and frothy, about 1 minute.
  3. Add the sugar and beat until the mixture has lightened in colour and falls in ribbons off the mixer, about 1 minute.
  4. Add the butter, oil and vanilla and beat until smooth, about 1 minute.
  5. In a second bowl, whisk together the flour, cocoa and salt.
  6. Add the flour mixture to the wet ingredients and beat just until combined — don’t over-mix or the brownies will be tough. The batter will be quite thick.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake until the brownies reach your desired doneness — 15 minutes for thick, ooey-gooey brownies, up to 20 minutes for fluffier, cakey ones. Don’t bake longer than 25 minutes.
  9. Let the brownies cool in the pan for 5 minutes, then cut into squares and transfer to a wire rack to finish cooling. Serve with ice cream, whipped cream, sprinkles, or chocolate syrup.
