Vegan Cauliflower Wings

Rice-paper-wrapped cauliflower florets, broiled until crisp and tossed in hot sauce.

Ingredients
  • 1 litre vegetable broth
  • 1 medium cauliflower, broken into about 32 florets
  • 16 rice paper wraps
  • 180ml red hot sauce (or sauce of choice)
Instructions
  1. Bring the vegetable broth to a boil in a large saucepan. Parboil the cauliflower florets in batches of 5, for 1 minute each, removing with a slotted spoon. Let cool for 5 minutes.
  2. Take the pot off the heat and let cool slightly. Cut the rice paper wraps in half and dip into the broth for about 10 seconds until softened.
  3. Wrap a rice paper half around each floret until fully covered. Place on a baking sheet and broil at 260°C on the middle rack for 8 minutes, turning every 2 minutes until browned.
  4. Once crisped, remove from the oven, cool for 10 minutes, then toss in the hot sauce.
