Chocolate Mousse

Ingredients
- 4 medium eggs
- 120g dark chocolate (at least 70% cocoa)
- 4 tsp sugar, or to taste
Instructions
- Break the chocolate into pieces and put in a bowl over, but not touching, a pan of simmering water. When it begins to melt, turn the heat off. Separate the eggs.
- Whisk the egg whites to soft peaks, add the sugar, and whisk briefly to combine.
- Mix the egg yolks quickly into the melted chocolate, then whisk in a third of the egg white to loosen. Fold the rest in very gently until just combined — take care not to overmix.
- Spoon into bowls and refrigerate for at least 4 hours until set.
