Chocolate Mousse

A classic light-as-air chocolate mousse made from just eggs, dark chocolate and sugar.

Ingredients
  • 4 medium eggs
  • 120g dark chocolate (at least 70% cocoa)
  • 4 tsp sugar, or to taste
Instructions
  1. Break the chocolate into pieces and put in a bowl over, but not touching, a pan of simmering water. When it begins to melt, turn the heat off. Separate the eggs.
  2. Whisk the egg whites to soft peaks, add the sugar, and whisk briefly to combine.
  3. Mix the egg yolks quickly into the melted chocolate, then whisk in a third of the egg white to loosen. Fold the rest in very gently until just combined — take care not to overmix.
  4. Spoon into bowls and refrigerate for at least 4 hours until set.
