Ingredients

  • 900g chipping potatoes
  • 3 tablespoons salt
  • 3 tablespoons (45ml) distilled white vinegar
  • 3l vegetable oil

Instructions

  1. Peel and cut the potatoes into long 1/2-inch chips
  2. Put 3l of water with the chips, salt and vinegar. Bring to a boil over high heat and boil until potatoes are fully tender, but not falling apart, about 12 minutes.
  3. Drain and spread into an even layer on a wire rack set. Let dry for 5 minutes.
  4. For best results, freeze potatoes for at least 3 hours, until frozen solid, and up to overnight before continuing with the next step 2.
  5. Line a rimmed baking sheet with a double layer of paper towels; set aside. Deep fry at 130ºC in batches until a crust begins to form.
  6. Let potatoes cool to room temperature, about 30 minutes.
  7. For best results, transfer potatoes to a wire rack set within a rimmed baking sheet and freeze potatoes for at least 3 hours, until frozen solid, and up to overnight before continuing with the next step.
  8. Heat your oven to 130ºC. Deep fry chips in batches at 190ºC until crisp and light golden brown, about 5 minutes.
