Steam Oven French Fries 101

Restaurant-style fries at home — par-cooked with full steam, then crisped in air fryer mode for a perfect Belgian-frites texture.

Ingredients
  • 4 medium russet potatoes, cut into 6mm-thick matchsticks
  • 4 tsp extra virgin olive oil
  • 1 tsp fine salt
  • Freshly ground black pepper
  • Nonstick oil spray
Instructions
  1. Line a sheet pan with aluminium foil.
  2. Place the potatoes in an even layer on the prepared pan.
  3. Transfer to the oven and cook with full steam until the potatoes are cooked through but still firm, about 30 minutes. Remove from the oven.
  4. Carefully transfer the fries to a large bowl. Add the oil and salt, and season with pepper to taste. Toss carefully with your hands or tongs until well coated.
  5. Replace the foil on the sheet pan with a clean piece (important — the first cook releases sticky starches). Spray with oil spray, then place the fries on the pan in a single layer.
  6. Return the pan to the oven in air fryer mode and cook until crisp and browned, 15-20 minutes.
  7. Carefully remove the pan from the oven, transfer the fries to a plate or bowl, and serve with your favourite dipping sauce.
