BBQ Raspberry Marshmallows

Homemade raspberry marshmallows, chargrilled on skewers and served with a fresh raspberry sauce.

Ingredients
  • 450g granulated sugar
  • 1 tbsp liquid glucose
  • 9 gelatine leaves, soaked in cold water
  • 2 free-range egg whites
  • 1 tsp vanilla extract
  • vegetable oil, for greasing
  • 125g raspberries
  • 5-6 tbsp icing sugar, plus extra for dusting
  • 5-6 tbsp cornflour, plus extra for dusting
  • 250g raspberries (for the sauce)
  • 2 tbsp icing sugar (for the sauce)
Instructions
  1. For the marshmallows, place the granulated sugar, glucose and 200ml water into a heavy-based saucepan and bring to the boil. Heat until a sugar thermometer shows 127°C/260°F.
  2. Add the soaked gelatine to the hot sugar syrup and stir to dissolve, then pour the mixture into a jug.
  3. Place the egg whites into a grease-free bowl and whisk until firm peaks form.
  4. Continue to whisk the egg whites while pouring in the sugar syrup, whisking until the whites are shiny.
  5. Add the vanilla extract and continue to whisk for 5-10 minutes until the mixture is thick enough to hold its shape on the whisk.
  6. Lightly oil a shallow 30cm x 20cm baking tray and dust with icing sugar and cornflour.
  7. Spoon in half the marshmallow mixture and scatter the 125g raspberries over the top. Cover with the remaining mixture, smoothing the top with a wet palette knife. Chill in the fridge for at least 1 hour.
  8. For the raspberry sauce, place the 250g raspberries and 2 tbsp icing sugar into a food processor and blend until smooth. Pass through a fine sieve.
  9. Remove the marshmallow from the fridge and dust more icing sugar and cornflour over the work surface. Loosen the edges and turn out onto the dusted surface.
  10. Cut into squares and roll the marshmallows in icing sugar and cornflour to coat.
  11. Preheat a grill to high, or use a barbecue.
  12. Thread the marshmallows onto wooden skewers. Grill for 1-2 minutes until slightly charred and gooey.
  13. Serve the marshmallow skewers with the bowl of raspberry sauce.
