Pickle Fries

Ingredients
- A good chipping potato I used Maris piper
- 3/4 Cold water
- 1/4 White wine vinegar
- 3 bay leaves
- 3 crushed garlic cloves
- Salt
- Oil for frying
Instructions
- Cut the potatoes into fries and rinse in cold water
- Add 3/4 water and 1/4 vinegar to a pan with the garlic, bay and a generous amount of salt.
- Gently simmer the fries for 20-25 mins then allow them to go cold in the water before drying on a rack in the freezer
- Heat your oil to 130c and fry in batches for 6-7 minutes
- Increase the heat to 175c and fry again for 2-3 minutes serve immediately with salt and your favourite dip
