Ingredients

  • A good chipping potato I used Maris piper
  • 3/4 Cold water
  • 1/4 White wine vinegar
  • 3 bay leaves
  • 3 crushed garlic cloves
  • Salt
  • Oil for frying

Instructions

  1. Cut the potatoes into fries and rinse in cold water
  2. Add 3/4 water and 1/4 vinegar to a pan with the garlic, bay and a generous amount of salt.
  3. Gently simmer the fries for 20-25 mins then allow them to go cold in the water before drying on a rack in the freezer
  4. Heat your oil to 130c and fry in batches for 6-7 minutes
  5. Increase the heat to 175c and fry again for 2-3 minutes serve immediately with salt and your favourite dip
