Italian Style Sausage Casserole

An easy one-pan dinner of pork sausages, fresh veg and cannellini beans in a rich tomato sauce.

Ingredients
  • 2 onions
  • 2 carrots
  • 2 courgettes
  • 130g spinach
  • 800g cannellini beans (2 x 400g tins)
  • 800g chopped tinned tomatoes (2 x 400g tins)
  • 6 pork sausages
  • 2 tsp oregano
  • 3 tbsp extra virgin olive oil, plus a little extra to drizzle at the end
Instructions
  1. Cook the sausages separately in the oven for about 20 minutes (or according to pack instructions) while you prepare the rest of the dish.
  2. Heat 2 tbsp of the olive oil in a large flat-based pan or casserole dish on the hob. Add the onion and carrot and season with a little salt.
  3. Cook on a low heat for 5 minutes until the onions are softened and translucent, then add the courgette and oregano (and chilli flakes, if using). Cook for a further 5 minutes.
  4. Add the chopped tomatoes and allow to simmer. Once the sausages are cooked, slice them into thick pieces and add to the casserole. Season with salt and pepper.
  5. Add the cannellini beans and stir through. Add the spinach on top and allow it to steam and wilt down into the sauce.
  6. Once the sauce has thickened and is nice and chunky, taste and adjust the seasoning, then drizzle over the remaining olive oil.
  7. Serve with roasted potatoes or thick, crusty bread to mop up the sauce.
