Italian Style Sausage Casserole
An easy one-pan dinner of pork sausages, fresh veg and cannellini beans in a rich tomato sauce.
Ingredients
- 2 onions
- 2 carrots
- 2 courgettes
- 130g spinach
- 800g cannellini beans (2 x 400g tins)
- 800g chopped tinned tomatoes (2 x 400g tins)
- 6 pork sausages
- 2 tsp oregano
- 3 tbsp extra virgin olive oil, plus a little extra to drizzle at the end
Instructions
- Cook the sausages separately in the oven for about 20 minutes (or according to pack instructions) while you prepare the rest of the dish.
- Heat 2 tbsp of the olive oil in a large flat-based pan or casserole dish on the hob. Add the onion and carrot and season with a little salt.
- Cook on a low heat for 5 minutes until the onions are softened and translucent, then add the courgette and oregano (and chilli flakes, if using). Cook for a further 5 minutes.
- Add the chopped tomatoes and allow to simmer. Once the sausages are cooked, slice them into thick pieces and add to the casserole. Season with salt and pepper.
- Add the cannellini beans and stir through. Add the spinach on top and allow it to steam and wilt down into the sauce.
- Once the sauce has thickened and is nice and chunky, taste and adjust the seasoning, then drizzle over the remaining olive oil.
- Serve with roasted potatoes or thick, crusty bread to mop up the sauce.
