Garlic Potato Bubbles

Crispy garlic potato bubbles — small mashed-potato balls seasoned with garlic and pepper, then deep-fried golden. Great as a snack or side with a dipping sauce.

Ingredients
  • 4 large potatoes - peeled and chopped
  • 2 tbsp cornflour
  • 1 tbsp garlic powder
  • 1 tsp black pepper
  • Salt - to taste
  • Oil - for frying
  • Fresh coriander - chopped, to garnish
Instructions
  1. Peel and cut the potatoes, then boil in salted water for 30 mins or until fully cooked.
  2. Drain the potatoes and add to a mixing bowl.
  3. Add the salt, garlic powder, pepper and cornflour. Mash the potatoes until everything is combined.
  4. Shape into small balls, making sure there are no cracks.
  5. Heat oil in a pan over medium heat. Once hot, add the potato balls — do not overcrowd the pan, fry 5-6 at a time.
  6. Fry for 4-6 mins or until golden and crispy.
  7. Garnish with chopped coriander and serve with your favourite dipping sauce.
