Ingredients
- Cake
- 100g of flour
- 40g of cocoa
- 100g of sugar
- 1 teaspoon of baking powder
- Half a teaspoon of bicarbonate of soda
- 85g of dark chocolate, melted
- 100ml of oil
- 1 egg
- 85ml of whole milk
- 1 teaspoon of vanilla
- 80ml of boiling water
- Mousse
- 4 eggs, separated
- 75g of sugar
- 400g of dark chocolate, melted
- 300ml of double cream (lightly whipped)
- Pouring cream, mixed berries and chocolate shavings to serve
Instructions
- Mix the dry cake ingredients in a bowl
- Do the same with the wet, then add the wet to the dry and combine
- Spoon into a greased, lined 23cm spring form tin
- Bake at 180c for approximately 20 – 25 minutes and cool
- For the mousse whisk the egg whites and sugar to form a creamy meringue
- Combine the melted chocolate and egg yolks, then add the whipped cream. Finally fold in the egg whites
- Spoon onto the cooled base
- Chill overnight
- Serve with fruit, chocolate shavings and pouring cream
