Chocolate Mousse Cake

Ingredients
  • Cake
  • 100g of flour
  • 40g of cocoa
  • 100g of sugar
  • 1 teaspoon of baking powder
  • Half a teaspoon of bicarbonate of soda
  • 85g of dark chocolate, melted
  • 100ml of oil
  • 1 egg
  • 85ml of whole milk
  • 1 teaspoon of vanilla
  • 80ml of boiling water
  • Mousse
  • 4 eggs, separated
  • 75g of sugar
  • 400g of dark chocolate, melted
  • 300ml of double cream (lightly whipped)
  • Pouring cream, mixed berries and chocolate shavings to serve
Instructions
  1. Mix the dry cake ingredients in a bowl
  2. Do the same with the wet, then add the wet to the dry and combine
  3. Spoon into a greased, lined 23cm spring form tin
  4. Bake at 180c for approximately 20 – 25 minutes and cool
  5. For the mousse whisk the egg whites and sugar to form a creamy meringue
  6. Combine the melted chocolate and egg yolks, then add the whipped cream. Finally fold in the egg whites
  7. Spoon onto the cooled base
  8. Chill overnight
  9. Serve with fruit, chocolate shavings and pouring cream
