Chipotle Chicken Booster Bowl

An air-fried chicken and baby potato bowl with peppers, tomato and a creamy chipotle sauce.

Ingredients
  • Baby potatoes 800 grams, cubed
  • Onion and garlic salt seasoning, to taste
  • Spray oil
  • Chicken breast 500 grams, diced
  • Salt, to taste
  • Fajita seasoning, to taste
  • Light mayonnaise 160 grams
  • Sweet chilli sauce 120 grams
  • 0% fat Greek yogurt 200 grams
  • Chipotle seasoning 2 sachets
  • Red bell peppers x4
  • Red onions x2
  • Tomatoes x8, chopped
Instructions
  1. Toss the cubed baby potatoes with the onion and garlic salt seasoning and a spray of oil.
  2. Air fry the potatoes at 200°C for around 20 minutes, until golden and cooked through.
  3. Season the diced chicken breast with salt and fajita seasoning.
  4. Air fry the chicken at 200°C for around 12 minutes, until cooked through.
  5. Meanwhile, make the sauce by mixing the light mayonnaise, sweet chilli sauce, Greek yogurt and chipotle seasoning together.
  6. Slice the red bell peppers and red onions, and chop the tomatoes.
  7. Divide the potatoes, chicken, peppers, onion and tomatoes between bowls.
  8. Spoon over the sauce and serve.
