Caramelized Onion Bread

Deeply savoury caramelised onion butter, whipped smooth and spread thick on toasted bread.

Ingredients
  • 115g butter, softened to room temperature
  • 2 small onions, any colour, very thinly sliced
  • 1 tbsp vegetable oil
  • 1/2 tsp fine salt or sea salt
  • large pinch of MSG (optional)
  • 4 thick slices of bread, of your choice
Instructions
  1. Take the butter out of the fridge and let it come to room temperature until it offers no resistance when poked.
  2. Slice the onions as thinly as you can.
  3. Heat the oil in a large pan over the lowest heat your stove will go.
  4. Add the onions and salt, and stir to coat the onions in the oil.
  5. Leave the onions to caramelise slowly for at least an hour without increasing the heat — turning the heat up will fry and crisp them instead of caramelising them.
  6. Once caramelised, scrape the onions out of the pan and let them cool.
  7. Blitz the cooled onions with the butter and MSG in a food processor or with an immersion blender until smooth, with just a few flecks of onion remaining.
  8. Lightly toast a slice of bread, spread generously with the onion butter, then return to the toaster oven, grill or air fryer until the onion flecks catch a little colour at the tips.
  9. Eat immediately.
