BBQ Chicken Flatbreads

Quick, versatile flatbreads topped with spiced chicken, BBQ sauce and melted mozzarella.

Ingredients
  • 1 large boneless, skinless chicken breast, cut into small bite-sized pieces (or chicken thighs)
  • 1 tbsp olive oil
  • 1 tsp sweet paprika
  • ½ tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp sea salt flakes
  • ½ tsp freshly cracked black pepper
  • 4 flatbreads
  • 60ml store-bought or homemade BBQ sauce
  • 150g grated mozzarella
  • 1 small red onion, finely sliced
  • 1 small pepper, finely sliced
  • 1 tbsp freshly chopped coriander, to garnish (optional)
Instructions
  1. Marinate the chicken: Combine the chicken with the olive oil, both paprikas, garlic powder, onion powder, salt and pepper in a bowl. Toss until evenly coated.
  2. Cook the chicken: Heat a large frying pan over medium-high heat. Add the chicken and cook for about 6 minutes, until browned and cooked through. Set aside.
  3. Prepare the flatbreads: Preheat the oven to 200°C (fan). Line a baking tray with baking paper and place the flatbreads on it.
  4. Spread the sauce: Apply a thin layer of BBQ sauce over each flatbread.
  5. Add the toppings: Sprinkle over the mozzarella evenly, then top with the cooked chicken, red onion and pepper slices.
  6. Bake: Bake for 8-10 minutes, until the cheese melts and the edges turn golden and crispy. Swap the trays halfway through if using two.
  7. Serve: Sprinkle with coriander if desired and serve immediately.
