Barbecue Sauce

A sweet, smoky ketchup-based barbecue sauce spiced with cayenne, paprika and mustard, and mellowed with molasses.

Ingredients
  • 1 tsp cayenne pepper
  • 1 tsp cracked black peppercorns
  • 1 tsp onion powder
  • 1 tbsp garlic powder
  • 60g smoked paprika
  • 1 tsp salt
  • 500g ketchup
  • 100g yellow American mustard
  • 125ml cider vinegar
  • 20ml Worcestershire sauce
  • 90g molasses
  • 90g soft dark brown sugar
  • 15g butter
  • 1 medium onion, diced
Instructions
  1. In a small bowl, mix the cayenne pepper, black pepper, onion powder, garlic powder, smoked paprika and salt together.
  2. In a separate bowl, mix together the ketchup, mustard, cider vinegar, Worcestershire sauce, molasses and brown sugar.
  3. Melt the butter in a large saucepan over a low heat. Add the onion and cook for about 5 minutes until soft and translucent.
  4. Add the dry spices to the pan and stir for about 2 minutes.
  5. Add the wet ingredients and simmer for 15 minutes over a medium heat, or until the mixture reduces and thickens.
  6. Strain if you don’t want chunks of onion, or blitz until smooth.
  7. Serve straight away, but it’s even better once cooled.
