Barbecue Sauce
A sweet, smoky ketchup-based barbecue sauce spiced with cayenne, paprika and mustard, and mellowed with molasses.
Ingredients
- 1 tsp cayenne pepper
- 1 tsp cracked black peppercorns
- 1 tsp onion powder
- 1 tbsp garlic powder
- 60g smoked paprika
- 1 tsp salt
- 500g ketchup
- 100g yellow American mustard
- 125ml cider vinegar
- 20ml Worcestershire sauce
- 90g molasses
- 90g soft dark brown sugar
- 15g butter
- 1 medium onion, diced
Instructions
- In a small bowl, mix the cayenne pepper, black pepper, onion powder, garlic powder, smoked paprika and salt together.
- In a separate bowl, mix together the ketchup, mustard, cider vinegar, Worcestershire sauce, molasses and brown sugar.
- Melt the butter in a large saucepan over a low heat. Add the onion and cook for about 5 minutes until soft and translucent.
- Add the dry spices to the pan and stir for about 2 minutes.
- Add the wet ingredients and simmer for 15 minutes over a medium heat, or until the mixture reduces and thickens.
- Strain if you don’t want chunks of onion, or blitz until smooth.
- Serve straight away, but it’s even better once cooled.
