Barbecue Ribs

Oven-braised baby back ribs finished on the barbecue, glazed with a Marmite and muscovado marinade.

Ingredients
  • 2 racks baby back/loin ribs
  • 1 tbsp Marmite
  • 1 tbsp English mustard
  • 1 1/2 tsp smoked paprika
  • 2 tbsp tomato ketchup
  • 2 1/2 tbsp dark muscovado sugar
Instructions
  1. Turn the racks skin-side down and peel the thin membrane away from the back of each rack, starting at the narrow end.
  2. Mix the marinade ingredients and rub about half into the ribs. Cover and refrigerate for 4 hours, turning once or twice.
  3. Pre-heat the oven to 150°C. Cover the ribs tightly with foil and cook for about 2 1/2 hours until tender, basting once or twice and removing the foil for the final 15 minutes.
  4. Heat a barbecue or griddle pan until hot, brush the ribs with the remaining marinade, and cook until charred and caramelised. Serve immediately.
