Barbecue Ribs
Oven-braised baby back ribs finished on the barbecue, glazed with a Marmite and muscovado marinade.

Ingredients
- 2 racks baby back/loin ribs
- 1 tbsp Marmite
- 1 tbsp English mustard
- 1 1/2 tsp smoked paprika
- 2 tbsp tomato ketchup
- 2 1/2 tbsp dark muscovado sugar
Instructions
- Turn the racks skin-side down and peel the thin membrane away from the back of each rack, starting at the narrow end.
- Mix the marinade ingredients and rub about half into the ribs. Cover and refrigerate for 4 hours, turning once or twice.
- Pre-heat the oven to 150°C. Cover the ribs tightly with foil and cook for about 2 1/2 hours until tender, basting once or twice and removing the foil for the final 15 minutes.
- Heat a barbecue or griddle pan until hot, brush the ribs with the remaining marinade, and cook until charred and caramelised. Serve immediately.
