AirFryer Salt & Pepper Chicken

Sticky, spiced air-fried chicken with peppers, chilli and a mild curry sauce kick.

Ingredients
  • 500g chicken breast, cut into chunks
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 1/2 red chilli, sliced
  • 1/2 green chilli, sliced
  • 1 white onion, sliced
  • 2 tbsp sesame oil
  • 2 heaped tbsp cornflour
  • 2 tbsp sweet chilli sauce
  • 2 garlic cloves, crushed
  • 25g Kerala salt and pepper seasoning
  • Salt
  • Pepper
  • 85g curry sauce powder (e.g. Mayflower brand)
Instructions
  1. Slice the chicken into even chunks and add to a bowl.
  2. Season with salt and pepper, then add the sesame oil and cornflour, and mix until the chicken is fully coated.
  3. Cook in the air fryer or oven for 16-20 minutes at 200°C until the chicken is cooked through.
  4. Fry the peppers and onion over a medium heat for 5-7 minutes.
  5. Add the garlic and chillies and cook for a further 5 minutes on a low heat.
  6. Stir the Kerala seasoning into the vegetables.
  7. Transfer the cooked chicken into the pan and mix through the sweet chilli sauce.
