Slow Cooker Pepper Steak
Tender beef strips and peppers slow-cooked in a savoury soy and ginger sauce.
Ingredients
- 900g beef strips (top sirloin or round steak, cut into 1cm strips)
- 1 green bell pepper, sliced thick
- 1 red bell pepper, sliced thick
- 1 white onion, sliced
- 120ml water
- 2 beef stock cubes
- 45ml soy sauce
- 5ml Worcestershire sauce
- 1/4 tsp ground ginger
- 1/4 tsp garlic powder
- 1/2 tsp black pepper
- 2 tsp brown sugar (honey or white sugar also work)
- 15g cornflour
- 1/4 tsp red pepper flakes (optional)
Instructions
- In a small microwaveable bowl, add the water and beef stock cubes. Microwave for 30 seconds, then mix until dissolved, using the back of a spoon to break up the cubes. (If you don’t have a microwave, dissolve the stock cubes in the water on the stove-top instead.)
- Add the soy sauce, Worcestershire sauce, ginger, garlic powder, black pepper, brown sugar and cornflour to the bowl and whisk until smooth. Stir in the red pepper flakes if using. Pour the sauce into the slow cooker.
- Add the beef strips, sliced peppers and onion on top of the sauce in the slow cooker.
- Cover and cook on low for 5 hours, until the beef is tender.
