Slow Cooker Balsamic Garlic Beef Bites & New Potatoes
Tender beef bites and baby potatoes slow-cooked in a rich balsamic garlic sauce - an easy set-and-forget dinner.
Ingredients
- 680g beef stew meat, cut into bite-sized pieces
- 450g baby new potatoes, halved
- 4 cloves garlic, minced
- 80ml balsamic vinegar
- 60ml beef stock
- 30ml soy sauce
- 30ml olive oil
- 15g brown sugar
- Salt and pepper, to taste
- Fresh parsley, chopped, to garnish
Instructions
- Add the beef bites, halved new potatoes and minced garlic to the slow cooker.
- In a bowl, mix together the balsamic vinegar, beef stock, soy sauce, olive oil and brown sugar, then pour over the beef and potatoes.
- Season with salt and pepper, then stir to coat everything evenly.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender and the potatoes are soft.
- Garnish with fresh parsley and serve with a side of vegetables or crusty bread to soak up the sauce.
