Slow Cooker Balsamic Garlic Beef Bites & New Potatoes

Ingredients
  • 680g beef stew meat, cut into bite-sized pieces
  • 450g baby new potatoes, halved
  • 4 cloves garlic, minced
  • 80ml balsamic vinegar
  • 60ml beef stock
  • 30ml soy sauce
  • 30ml olive oil
  • 15g brown sugar
  • Salt and pepper, to taste
  • Fresh parsley, chopped, to garnish
Instructions
  1. Add the beef bites, halved new potatoes and minced garlic to the slow cooker.
  2. In a bowl, mix together the balsamic vinegar, beef stock, soy sauce, olive oil and brown sugar, then pour over the beef and potatoes.
  3. Season with salt and pepper, then stir to coat everything evenly.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender and the potatoes are soft.
  5. Garnish with fresh parsley and serve with a side of vegetables or crusty bread to soak up the sauce.
