Raspberry French 75

A fun raspberry twist on the classic French 75, with a homemade raspberry syrup, gin, lemon juice and dry sparkling wine.

Ingredients
  • 200g sugar (for the raspberry syrup)
  • 240ml water (for the raspberry syrup)
  • 170g fresh raspberries, about 1½ cups (for the raspberry syrup)
  • 1 lemon
  • 45ml gin
  • 15ml lemon juice
  • 15ml raspberry syrup
  • Dry sparkling wine, to top up
  • Raspberries, for garnish
Instructions
  1. Prepare the raspberry syrup: combine the sugar, water and raspberries in a medium saucepan over medium heat.
  2. Bring to a simmer, stirring often, then reduce the heat to medium-low. Continue cooking at a low simmer for 5 minutes, stirring occasionally.
  3. Remove from the heat and let cool slightly.
  4. Place a fine mesh strainer over a small bowl, then pour in the syrup. Press with the back of a spoon, getting as much liquid as possible through the strainer.
  5. Discard the seeds, then chill the syrup until cool. (This makes more syrup than you’ll need for one cocktail - keep the rest chilled for future drinks.)
  6. Remove the rind from the lemon in a long strip. Slice the rind thinly, keeping it in a long strip, then set aside.
  7. Fill a cocktail shaker with ice.
  8. Add the gin, lemon juice and raspberry syrup to the shaker. Shake until chilled.
  9. Strain the mixture into a champagne glass.
  10. Top off the glass with sparkling wine. Garnish with the lemon rind and a fresh raspberry.
  11. Serve immediately. Enjoy!
