Prawn Tacos with Zesty Lime Dressing
Street food-style tacos ready in under 15 minutes, with Cajun king prawns, a crunchy slaw and a zesty lime yogurt dressing.
Ingredients
- 360g king prawns (frozen, defrosted)
- 2 tbsp sunflower oil
- 4 tsp Cajun spice
- 8 small tortillas
- 1 avocado
- For the slaw:
- ¼ white cabbage
- ½ red onion
- For the dressing:
- 125g Greek yogurt
- Zest and juice of 1 lime
- 1 tsp honey
- 1 tsp mint sauce
Instructions
- Make the dressing: mix the Greek yogurt, lime zest and juice, honey and mint sauce together in a bowl.
- Finely shred the cabbage and red onion, then mix with half the dressing. Reserve the remaining dressing for drizzling.
- Heat the oil in a large frying pan over a medium-high heat. Add the prawns and Cajun spice and cook for around 5 minutes, until cooked through.
- Toast the tortillas (carefully over a flame, in a toaster, or in the oven for 3-4 minutes).
- Assemble: layer the slaw and prawns into the tortillas, top with sliced avocado and drizzle with the remaining dressing before serving.
