One-Pot Creamy Cheesy Leek Pasta

A creamy, comforting pasta dish with soft sweet leeks and a rich cheesy sauce, all made in one pan.

Ingredients
  • 1 onion, finely chopped
  • 4 leeks, finely sliced
  • 2 garlic cloves, crushed
  • 320g uncooked pasta (linguine works well)
  • 1.2 litres chicken or vegetable stock
  • 8 tbsp low-fat cream cheese
  • 60g cheddar cheese
  • 60g parmesan
  • Salt and black pepper
  • Oil spray
Instructions
  1. Spray a deep frying pan with a little oil over a medium-high heat.
  2. Add the onion, garlic, leeks and a little of the stock, along with salt and black pepper, and fry until translucent.
  3. Add the cream cheese and stir until melted.
  4. Add the pasta and remaining stock, bring to the boil, cover, reduce the heat and simmer for 10 minutes.
  5. Remove the lid and stir in the cheddar and parmesan until melted and the pasta is creamy and velvety, a couple of minutes.
  6. Serve and enjoy.
