One-Pot Creamy Cheesy Leek Pasta
A creamy, comforting pasta dish with soft sweet leeks and a rich cheesy sauce, all made in one pan.
Ingredients
- 1 onion, finely chopped
- 4 leeks, finely sliced
- 2 garlic cloves, crushed
- 320g uncooked pasta (linguine works well)
- 1.2 litres chicken or vegetable stock
- 8 tbsp low-fat cream cheese
- 60g cheddar cheese
- 60g parmesan
- Salt and black pepper
- Oil spray
Instructions
- Spray a deep frying pan with a little oil over a medium-high heat.
- Add the onion, garlic, leeks and a little of the stock, along with salt and black pepper, and fry until translucent.
- Add the cream cheese and stir until melted.
- Add the pasta and remaining stock, bring to the boil, cover, reduce the heat and simmer for 10 minutes.
- Remove the lid and stir in the cheddar and parmesan until melted and the pasta is creamy and velvety, a couple of minutes.
- Serve and enjoy.
