Mushroom Tacos

Ingredients
- 1/2 cup (125ml) orange juice
- 6 Tbsp soy sauce
- 1 Tsp chili paste
- a handful chopped coriander
- 2 Tsp each cumin and oregano
- 2 limes, juiced
- 1/4 cup (60ml) olive oil
- 450g mushrooms
- a bunch coriander or parsley
- 2 cloves garlic
- 4 Tbsp vegan yogurt
- 4 Tbsp vegan mayo
- juice from 1/2 lemon
- 1 Tsp cumin
- 1 Tsp agave
- salt to taste
Instructions
- Mix marinade ingredients (orange juice, soy sauce, chili paste, coriander, cumin and oregano, lime juice and olive oil)
- Marinate the mushrooms for at least half an hour
- Fry until cooked
- Blend salsa ingredients (coriander or parsley, garlic, vegan yogurt, vegan mayo, lemon jucie, cumin, agave, salt) until smooth.
- Serve in soft taco shells with salad.
