Mushroom Tacos

Ingredients

  • 1/2 cup (125ml) orange juice
  • 6 Tbsp soy sauce
  • 1 Tsp chili paste
  • a handful chopped coriander
  • 2 Tsp each cumin and oregano
  • 2 limes, juiced
  • 1/4 cup (60ml) olive oil
  • 450g mushrooms
  • a bunch coriander or parsley
  • 2 cloves garlic
  • 4 Tbsp vegan yogurt
  • 4 Tbsp vegan mayo
  • juice from 1/2 lemon
  • 1 Tsp cumin
  • 1 Tsp agave
  • salt to taste

Instructions

  1. Mix marinade ingredients (orange juice, soy sauce, chili paste, coriander, cumin and oregano, lime juice and olive oil)
  2. Marinate the mushrooms for at least half an hour
  3. Fry until cooked
  4. Blend salsa ingredients (coriander or parsley, garlic, vegan yogurt, vegan mayo, lemon jucie, cumin, agave, salt) until smooth.
  5. Serve in soft taco shells with salad.
