Ingredients

  • 2 shallots finely diced
  • 4 garlic cloves finely diced
  • 150g of your mushroom of choice I used shiitake and chestnut mushrooms
  • 2 tbsp Sherry vinegar
  • 2 tsp light soy sauce (or more to taste)
  • 250ml good quality beef stock
  • Black pepper
  • 4-5 tbsp double cream.

Instructions

  1. I like to use the steak pan for this so just remove the existing garlic and herbs before adding the shallot and garlic.
  2. Soften the shallot/garlic then add the mushrooms keeping the temperature high.
  3. When the mushrooms are softened glaze the pan with the Sherry vinegar and soy.
  4. Add the beef stock and simmer for 2-3 mins to reduce add a few grinds of black pepper followed by the cream.
