Mojito

A classic Cuban mojito — white rum, fresh lime, mint and soda over crushed ice.

Ingredients
  • 60ml white rum
  • 30ml fresh lime juice (about 1 lime)
  • 15-20ml sugar syrup
  • 8-10 fresh mint leaves
  • Club soda, to top
  • Crushed ice
Instructions
  1. Place the mint leaves in the palm of your hand and give them a quick clap to release their essential oils, then drop them into a tall highball glass.
  2. Add the lime juice and sugar syrup to the glass. Use a cocktail muddler or the handle of a wooden spoon to gently press the mint into the liquid — just lightly bruise the leaves, don’t pulverise them.
  3. Pour in the white rum. Fill the glass about halfway with crushed ice and stir well so the sugar, lime and mint aren’t all sitting at the bottom.
  4. Fill the rest of the glass to the brim with more crushed ice, then top with a splash of club soda.
  5. Stir one last time, garnish with a fresh sprig of mint and a lime wedge, and serve.
