Mojito
A classic Cuban mojito — white rum, fresh lime, mint and soda over crushed ice.
Ingredients
- 60ml white rum
- 30ml fresh lime juice (about 1 lime)
- 15-20ml sugar syrup
- 8-10 fresh mint leaves
- Club soda, to top
- Crushed ice
Instructions
- Place the mint leaves in the palm of your hand and give them a quick clap to release their essential oils, then drop them into a tall highball glass.
- Add the lime juice and sugar syrup to the glass. Use a cocktail muddler or the handle of a wooden spoon to gently press the mint into the liquid — just lightly bruise the leaves, don’t pulverise them.
- Pour in the white rum. Fill the glass about halfway with crushed ice and stir well so the sugar, lime and mint aren’t all sitting at the bottom.
- Fill the rest of the glass to the brim with more crushed ice, then top with a splash of club soda.
- Stir one last time, garnish with a fresh sprig of mint and a lime wedge, and serve.
