Marry Me Salmon
Pan-seared salmon fillets in a creamy garlic and sun-dried tomato sauce, served over mashed potatoes.

Ingredients
- 4 salmon fillets
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper
- 1 tsp paprika
- 1 tsp Italian herbs
- 2 tbsp olive oil
- 2 tbsp fresh garlic, minced
- 160ml chicken stock
- 240ml double cream
- 60g sun-dried tomatoes
- 1/2 tsp red pepper flakes
- 1 tsp Italian herbs, extra
- Mashed potatoes, to serve
Instructions
- Season the salmon fillets with the onion powder, garlic powder, paprika, Italian herbs, salt and pepper.
- Sear the salmon in the olive oil in a cast iron skillet for 2 minutes on each side, then transfer to a separate pan.
- In the same skillet, add the garlic and cook for about 3 minutes.
- Stir in the red pepper flakes and Italian herbs.
- Add the chicken stock, sun-dried tomatoes and cream, along with the remaining seasoning, and allow to simmer.
- Pour the sauce over the salmon and bake in the oven for 5-7 minutes at 200°C.
- Serve over mashed potatoes.
