Marry Me Salmon

Pan-seared salmon fillets in a creamy garlic and sun-dried tomato sauce, served over mashed potatoes.

Ingredients
  • 4 salmon fillets
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper
  • 1 tsp paprika
  • 1 tsp Italian herbs
  • 2 tbsp olive oil
  • 2 tbsp fresh garlic, minced
  • 160ml chicken stock
  • 240ml double cream
  • 60g sun-dried tomatoes
  • 1/2 tsp red pepper flakes
  • 1 tsp Italian herbs, extra
  • Mashed potatoes, to serve
Instructions
  1. Season the salmon fillets with the onion powder, garlic powder, paprika, Italian herbs, salt and pepper.
  2. Sear the salmon in the olive oil in a cast iron skillet for 2 minutes on each side, then transfer to a separate pan.
  3. In the same skillet, add the garlic and cook for about 3 minutes.
  4. Stir in the red pepper flakes and Italian herbs.
  5. Add the chicken stock, sun-dried tomatoes and cream, along with the remaining seasoning, and allow to simmer.
  6. Pour the sauce over the salmon and bake in the oven for 5-7 minutes at 200°C.
  7. Serve over mashed potatoes.
