Lamb Burgers with Mint Mayo and Tomato Relish
These tasty burgers are perfect as an easy mid-week meal, or for a barbecue. The tomato relish goes well with any grilled meat, from steaks and chops to bangers.

Ingredients
- 50g fresh white breadcrumbs
- 1 garlic clove, crushed
- 1 small bunch fresh coriander, chopped
- 1 1/2 tsp mint sauce
- 1 large red onion, roughly chopped
- 500g lean lamb mince
- 1 tbsp olive oil, for frying
- 8 lettuce leaves
- 8 brioche buns
- 3 gherkins, thinly sliced
- Salt and freshly ground black pepper
- 1 tbsp olive oil (for the relish)
- 1 onion, roughly chopped
- 1 garlic clove, crushed (for the relish)
- 400g tin chopped tomatoes
- 1 tbsp balsamic vinegar
- 1 tbsp Worcestershire sauce
- 1 tbsp tomato ketchup, or a pinch of sugar
- 2 tbsp mayonnaise
- 2 tsp chopped mint
- 1 tsp mint sauce (for the mayo)
Instructions
- For the burgers, combine the breadcrumbs, garlic, coriander, mint sauce, onion, salt and pepper in a food processor until coarsely textured. Mix into the lamb mince using wet hands, then shape into 8 burgers. Chill on a baking tray in the fridge.
- For the tomato relish, heat the oil in a saucepan and fry the onion and garlic, covered, for 5-7 minutes until soft. Add the remaining relish ingredients, bring to the boil for 2-3 minutes, season, then simmer covered for 10 minutes.
- For the mint mayonnaise, mix the mayonnaise, chopped mint and mint sauce together.
- Cook the burgers for 3-4 minutes on each side until browned and cooked through, using a frying pan with the olive oil or a barbecue.
- Toast the bun halves. Spread relish on the bottom half, add lettuce, the burger, a dollop of mint mayo and the gherkins, then top with the other bun half.
