Garlic Butter Sausage Bites with Creamy Parmesan Pasta

Ingredients
  • 450g smoked sausage, sliced
  • 60g butter
  • 15ml olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley, to garnish
  • 340g pasta
  • 360ml double cream
  • 100g grated parmesan, plus extra to serve
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chilli flakes
Instructions
  1. For the garlic butter sausage bites, heat the olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned on both sides, about 4-5 minutes, then remove from the skillet and set aside.
  2. In the same skillet, melt half the butter, add the minced garlic and cook for 1-2 minutes until fragrant. Return the sausage to the skillet, sprinkle over the Italian seasoning and toss to coat. Season with salt and pepper and set aside.
  3. For the pasta, bring a large pot of salted water to the boil. Cook the pasta according to the packet instructions until al dente, then drain, reserving 120ml of the pasta water for later if needed.
  4. For the creamy parmesan sauce, melt the remaining butter in a separate saucepan over medium heat. Add the double cream and garlic powder, stirring until the mixture begins to simmer.
  5. Gradually whisk in the parmesan cheese until the sauce is smooth and creamy. Season with salt, pepper and the chilli flakes.
  6. Add the cooked pasta to the parmesan sauce and toss to coat, adding a little of the reserved pasta water if the sauce is too thick.
  7. Plate the creamy parmesan pasta and top with the garlic butter sausage bites. Garnish with fresh parsley and extra parmesan.
