Creamy Parmesan Garlic Mushroom Steak Sauce

A quick pan sauce of mushrooms, garlic, wine and cream to serve alongside steak.

Ingredients
  • 2 tbsp butter
  • 225g mushrooms, thinly sliced
  • 2 garlic cloves, minced
  • 60ml white wine
  • 120ml double cream
  • 60ml finely grated Parmesan
  • Salt and freshly ground pepper, to taste
Instructions
  1. In the same pan you browned the steak in, melt the butter over medium heat. Add the mushrooms and cook, without disturbing, until golden and browned. Flip and continue cooking.
  2. Stir in the garlic and cook until just soft. Deglaze with the wine, scraping up any browned bits from the pan.
  3. Once the wine has reduced slightly, stir in the cream and simmer, stirring occasionally, until thickened to your liking.
  4. Turn off the heat and stir in the Parmesan. Taste and season with salt and freshly ground pepper.
