Corned Beef Hash

Ingredients
- 1 sliced onion
- 1 clove garlic
- 200g smoked bacon lardons
- 1 tbs chopped parsley
- 500g corned beef, cut into 50mm cubes
- 6 chopped gherkins
- Salt and white pepper to season
- 50g butter
- 250g cooked new spuds, crushed by hand
- 4 poached eggs
- Brown sauce
Instructions
- Fry the bacon til crisp, remove, add the butter
- In same pan, fry the onions and garlic until soft (5-6mins)
- Add the rest – fold together
- Divide between the 4 plates and top with poached eggs
- Dollop on brown sauce
