Ingredients

  • 1 sliced onion
  • 1 clove garlic
  • 200g smoked bacon lardons
  • 1 tbs chopped parsley
  • 500g corned beef, cut into 50mm cubes
  • 6 chopped gherkins
  • Salt and white pepper to season
  • 50g butter
  • 250g cooked new spuds, crushed by hand
  • 4 poached eggs
  • Brown sauce

Instructions

  1. Fry the bacon til crisp, remove, add the butter
  2. In same pan, fry the onions and garlic until soft (5-6mins)
  3. Add the rest – fold together
  4. Divide between the 4 plates and top with poached eggs
  5. Dollop on brown sauce
