Air Fryer Parmesan Courgette Fries
Crispy parmesan-coated courgette fries from the air fryer, served with a garlic yoghurt dip.

Ingredients
- 1 medium courgette (about 200g)
- 2 tbsp grated Parmesan (10g)
- 1 tsp dried Italian herbs
- ½ tsp garlic powder
- Pinch of chilli flakes
- 1 tbsp plain 0% Greek yoghurt (15g)
- 1 small garlic clove, finely minced
Instructions
- Cut the courgette. Trim and cut into even batons about 7cm long and 1cm thick. Pat dry with kitchen paper.
- Add the coating. Mix the Parmesan, Italian herbs and garlic powder. Press the mixture lightly onto the cut surfaces of the courgette.
- Arrange. Place in one layer in the air fryer basket with space between the batons. Cook in batches if needed.
- Air fry. Cook at 200°C (180°C fan)/Gas 6 for 8-12 minutes, turning carefully halfway, until the courgette is tender and the cheese is golden.
- Mix the dip. Stir the minced garlic into the Greek yoghurt. Serve the warm fries immediately with the dip and chilli flakes.
